Unless you have very small bananas, you will only need two. There's no need to worry if you have less or more than 1 cup of mashed bananas. Simply use it all.

Butter: You can use spicy or lightly salted butter in this recipe. If I have unsalted on hand, I prefer it.

Reduce the salt in the flour mixture slightly if using salted butter.

White Sugar: I haven't tried this recipe with less sugar, but if you need to cut back on added sugar, you could probably cut it down to 1/2 cup. It will, of course, affect the sweetness of the finished loaf, but it may also reduce the banana flavor, as sugar works to enhance it as well.

Eggs: For the best results, have your eggs at room temperature before baking. Remove from the fridge 20-30 minutes ahead of time should suffice.

I used free-range eggs, which are a bright yellow color. Your batter may be a lighter color.

All-purpose flour: Because I bake bread, I always have unbleached flour on hand, which is what I used here. I don't think a bleached all-purpose will make a difference.

When the top of the loaf turns golden and cracked, it is almost done. When it begins to resemble this, use a tester to test it. When a tester inserted into the center of the loaf comes out clean, the loaf is done.
